Light Mocha Tiramisu

Oh coffee, how I love thee. I've been drinking iced coffee since I was a teenager. My hubby has been too! When we first started getting to know each other, that is pretty much what we did... got coffee together and talked. To this day, we still spend a moment sipping coffee together and catching up with life. As funny as it is, it's just our thing! We finally started making it at home because we simply couldn't justify running out to purchase it from the local coffee house every day. It is just too pricey, although our coffee at home has been pretty mediocre in comparison. Well, I recently heard about International Delight Light Iced Coffee sold right at Walmart which sounded awesome. Light and iced? Hello! I needed to try it! It comes in Vanilla and Mocha, yum. I came up with a couple of super recipes using it! First, a Light Mocha Coffee Tiramisu and then a Frozen Mocha Coffee.

Since the light iced coffee has reduced calories, I wanted to create a dessert using some other light ingredients to compliment it.  I used whipped topping and reduced fat cream cheese along with International Delight Light Iced Coffee in the Mocha flavor and just a bit of confectioners sugar to seal the deal. The combination was a lovely and creamy taste.

Ingredients

I used small mason jars to create these single serve desserts. I love how attractive they are, but also how great it is to store them in the refrigerator and just grab one whenever I am craving a treat. I then layered the yummy and creamy coffee flavored base with lady fingers and a good dose of cocoa to give it that traditional strong taste that is typical of Tiramisu recipes.

The outcome? A super yummy and indulgent dessert that we all loved! I will definitely make these again!

Light Mocha Tiramisu Recipe with International Delight Mocha Light Iced Coffee

Ingredients

  • 1.5 Cups of International Delight Mocha Light Iced Coffee
  • 16 oz Low Fat Cream Cheese
  • 16 oz Light Whipped Topping
  • 3 oz Lady Fingers
  • ⅓ Cup of Cocoa
  • ½ Confectioners Sugar (optional)

Instructions

  1. In a blender, combine the International Delight Mocha Light Iced Coffee, cream cheese and whipped topping until it is a smooth consistency. If you prefer really sweet desserts you can also add ½ cup of confectioner sugar, this is optional.
  2. Cut all of the lady fingers into halves. Take individual serving cups or small mason jars and begin by layering 2 lady finger halves, a sprinkle of cocoa and then top with a layer of the creamy coffee mixture. Do this 3 times and top with remaining creamy mixture.
  3. Refrigerate for at least 4 hours before serving. Top with additional whipped topping and a sprinkle of cocoa if you would like.

I love a great pick-me-up in the afternoon and purchasing a fancy shmancy beverage is just out of our budget right now. It costs about $4 to purchase a frozen coffee drink at my local coffee shop and the International Delight Light Iced Coffee costs about the same so it's definitely a great option for me. So I thought creating a Frozen coffee drink using it would be a super tasty and budget friendly option. I like to drink it straight too, its perfectly sweet and tasty. But sometimes I just want something a little special.

In the past, I've tried to make some frozen coffee beverages, but I think one of the mistakes I've made was adding water ice cubes. It waters down the drink and just doesn't taste very good. So, I froze 4 cubes of the Light Iced Coffee to blend in instead and it really worked out! Now I can enjoy a special frozen coffee beverage at home without sacrificing taste.

Frozen Mocha Iced Coffee Recipe with International Delight Mocha Light Iced Coffee

Ingredients

  • 4 Frozen Cubes of International Delight Mocha Light Iced Coffee
  • ¾ Cup of International Delight Mocha Light Iced Coffee

Instructions

  1. Blend both ingredients in a blender until ice is crushed completely. Enjoy!
  2. You can also topped with whipped topping and a sprinkle of cocoa if you are feeling fancy!

you spoiled it with the cool whip...thats stuff is gross...if you were a real italian...you would use cream

You can always replace it with cream Alison, but then it wouldn't necessarily be light. Happy eating!
